Add flax seeds to bread recipe?
I'd like to just add some whole flax seeds to my basic honey whole wheat bread recipe - which requires 1.5 cups AP flour and 1.5 cups whole wheat flour, plus the usual extras (yeast, milk, oil, honey, sugar, salt, warm water).
Can I just add a half cup or so of golden flax seeds to that recipe? I don't have a coffee grinder to grind them up, so I would like to add them whole.
Any suggestions appreciated!
In order to gain the benefits of flax seed, and all the fiber-goodness they contain, you would have to grind them into a powder. Otherwise, the hardy shell of the flax will prevent the seed from being utilized by your body at all, and it will simply pass through your system undigested. And since you've mentioned that you don't have a coffee-grinder, do not despair! All you need to do is roast the flax seeds (this allows for greater ease in crushing the seed) and then throw them in a blender. If you do not have a blender, then you can at least partially crush the seeds by placing them in a plastic bag and "rolling over" them with a rolling pin (that way, at least you are receiving some of the fiber benefits).
When baking with flax seed meal, it is recommended that you reduce the flour in the recipe by up to 25 percent and replace it with the ground flax seed. And, when baking bread that needs to rise, one should increase the amount of yeast, as flaxseed can increase fermentation and proof times.
